Mixed Fruit Shortcake
Ingredients:
- 1 cup peeled, diced kiwi fruit
- 1 cup fresh, frozen, or canned blueberries
- 1 cup peaches, fresh or canned in their own juice
- 1 cup sliced strawberries
- 2 Tablespoons sugar
- 4 small slices (1 ounce each) angel food or sponge cake
- 2 Tablespoons chopped fresh mint (optional)
Directions:
- Wash hands with warm water and soap. Wash fresh fruits before preparing.
- Mix kiwi fruit, blueberries, peaches, strawberries, and sugar.
- Let sit for 30 minutes to juice up.
- Place a cake slice on each of 4 plates and divide fruit topping among them.
- Top with mint.
- Serve immediately.
