“New” Creamy Herbed Silken Tofu Dressing
Ingredients:
- 1 14-ounce package of silken tofu
- 3 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup herbs (cilantro, parsley, basil, dill, or a combination), roughly chopped and loosely packed
- 1 teaspoon Dijon mustard
- 1 teaspoon honey*
- 4 tablespoons of lemon juice (juice of two 2 lemons) or your favorite vinegar such as, red or white wine vinegar
Directions:
- Wash hands with soap and warm water. Rinse any fresh vegetables before preparing.
- Place all ingredients into a blender or food processor.
- Pulse to combine, scraping down the sides of the blender or food processor when needed, and blend until mixture is smooth.
- Serve immediately with your favorite salad or as a dip for vegetables, a spread on a sandwich, or as a sauce for tacos. Store leftovers in the refrigerator for 3-4 days.
*Honey should not be fed to infants less than one year of age.
