Oatmeal Peanut Butter Bars
Ingredients:
- Vegetable oil or butter to prepare pan (or use parchment paper)
- 1 cup all-purpose flour
- 1 cup rolled or old-fashioned oats
- 2 teaspoon baking powder
- ¼ cup sugar (optional)
- 1 ripe banana
- 1 cup peanut butter (or other nut butter)
- 1 cup milk (or milk alternative)
- 1 teaspoon vanilla (optional)
- ½ cup of your favorite mix-ins like chocolate chips, raisins, dried cranberries, or nuts
Directions:
- Wash hands with soap and warm water. Wash produce well.
- Preheat oven to 350 degrees.
- Prepare an 8×8 inch baking pan by using oil or butter to grease it. As an alternative, line the baking pan with parchment paper.
- In a medium bowl, add flour, oats, baking powder, and sugar (if using) and stir to combine dry ingredients.
- In a separate medium bowl, mash the ripe banana. Add peanut butter, milk, and vanilla (if using) and stir to combine wet ingredients.
- Add the bowl of dry ingredients to the wet ingredients and stir to combine.
- Add mix-ins of your choice and stir gently.
- Add mixture to baking pan and bake for 20 minutes or until bars brown around the edges.
- Let cool, cut, and enjoy!
